Chicken Avocado Melt

Ingredients

2 Whole Chicken breast, split, skinned, and boned

2 Tablespoons of corn starch

1 teaspoons ground cumin

1 teaspoons of garlic salt

1 egg, slightly beaten

1 tablespoon of water

1/3 cup yellow cornmeal

3 tablespoons vegetable oil

1 firm ripe avocado, peeled and sliced

1 1/2 cups (6 ounces) shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup slicked green onion tops

1/4 cup chopped red bell pepper


Instructions

Preheat oven to  degrees F. Pound chicken breast between 2 pieces  of plastic wrap to 1/4 inch thickness. Combine cornstarch, cumin and garlic salt in shallow dish. Add chicken, dredging to coast. Combine eggs and water in small bowl. place mixture, then roll in cornmeal to coast. Heat oil in large skillet over medium heat. Add chicken; cook 2 minutes on each side. Remove chicken to shallow baking pan. Arrange avocado slices over chicken; sprinkle with cheese. Bake about 15 minutes or until chicken is tender and cheese melts. Transfer chicken to serving platter. Top with sour cream; sprinkle with green onions and red pepper
